31 ~ Leche Asada

leche asadaHere is another recipe from the Canary Islands.
Leche Asada, or baked milk, is a milk and egg custard popular among the local people.

LECHE ASADA - Milk and egg pudding

Ingredients

1/2 liter milk (1/2 quart approx)
4 eggs
3 TBS sugar
salt 1/2 teasp
lemon zest - grated rind of 1 medium lemon
1 teasp cinnamon

1. Preheat oven to 350F (177C)

2. Beat eggs, add milk, lemon rind, cinnamon, sugar and salt.

3. Pour mixture into buttered 9 inch square casserole dish and cook about 30 - 40 minutes or until
centre is done when pierced with knife.

4. Let cool a little and cut into portions, topped with cream, honey or fruit slices.

Traditional is to top it with ‘miel de palma’, a sweet honey-like syrup made from the reduced sap of the canary palm (phoenix canarensis).
